Healthy Eating: Applesauce Oatmeal Muffins

Ingredients

  • 1 cup old fashioned rolled oats (not instant)
  • 1 cup non-fat milk (or soy milk
  • 1 cup whole wheat flour
  • ½ cup unsweetened applesauce
  • 2 egg whites (or 2 Tbl ground flax seeds mixed w/ 4 Tb water)
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • 1 tsp sugar
  • nuts & raisins (optional)

Instructions

  1. 1. Let oats and milk soak for 20 minutes before starting.
  2. 2. Mix all wet ingredients together
  3. 3. Mix all dry ingredients together
  4. 4. Mix together wet & dry ingredients
  5. 5. Grease muffin tins.  Fill 2/3 full.  Bake at 375 for 25 minutes or until knife inserted comes out clean.
