Ingredients
- 1 cup old fashioned rolled oats (not instant)
- 1 cup non-fat milk (or soy milk
- 1 cup whole wheat flour
- ½ cup unsweetened applesauce
- 2 egg whites (or 2 Tbl ground flax seeds mixed w/ 4 Tb water)
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 tsp cinnamon
- 1 tsp sugar
- nuts & raisins (optional)
Instructions
- 1. Let oats and milk soak for 20 minutes before starting.
- 2. Mix all wet ingredients together
- 3. Mix all dry ingredients together
- 4. Mix together wet & dry ingredients
- 5. Grease muffin tins. Fill 2/3 full. Bake at 375 for 25 minutes or until knife inserted comes out clean.
